We finished canning the peaches today. Thanks to our friendly peach supplier, we were able to can 169 quarts of sliced peaches this year. Not all in one day, thankfully! The first 124 will be divided between us and our son’s family, as he and our DDIL helped with the canning.
Little slices of summer, canned and ready to enjoy during the next year.
Next week, it will be time to can some elderberry jelly.

I envy you the peaches. It brings back a lot of memories.
Wow,that’s alot of peaches!LOL,I don’t think I would know what to do with all of them, lol!I’ve never had an elderberry before,I’m curious as to what they taste like?
Can you suggest some material on how to can? I;m given many peaches by friends and this city girl never learned
Genny, I’m sure Rhonda’s #1 helper will get some peaches 😉
Hilary, the elderberries remind me a little of blackberry, but not as sweet. I don’t think anyone would mistake them for blackberries, though. I love the jelly. Can’t wait to make more. DH has been picking the berries and putting them in the freezer. When they are done ripening, I’ll can the whole lot at one time. ~~Rhonda 🙂
Annie, this site has great step-by-step instructions for all kinds of fruit and veggies. I hope you give canning a try!

Genny, do you remember when we went to Grandma Ashby’s brothers’ house and they canned peaches all day and we had to stay outside and play? Grandma even brought our lunch outside and we sat on the kitchen steps to eat.
And Cherylann is right…we’ll load you up! Can’t wait till it’s time to get started on decorating!!!
