Menu is well balanced and i like the idea that there is a break after a day for fridge food. Veggies and salads take minimal time to prepare.

Hi Rhonda I cannot eat broccoli. Is there another vegetable that would work in the beef and broccoli stir fry?

Mary Jane, we often make it with sugar snap peas. You could use snow peas or fresh green beans. You could add carrots, zucchini or yellow squash. Individually or a mixture, it would all be good. Oh, green onions or sliced yellow onions would be good, too! DH is allergic to onion, so I don’t put it in stir fry. ~~Rhonda
