Middle Daughter and I made three kinds of truffles for wedding favors at her friend’s wedding. The bride requested Butter Creams, Chocolate Truffles and Strawberry Truffles. This is the first time I’ve made strawberry flavored truffles.
Youngest Daughter tasted one of the truffle centers and had a flashback to childhood. When she was three or four, she loved the Teletubbies show. I made telly custard for her by mixing jello powder, cream cheese, and Cool Whip. I know…I know…what was I thinking?? But she LOVED it! These could be called Teletubbie Truffles around here.
Strawberry Truffles
8 oz. cream cheese, softened
2 T. strawberry jelly or jam
2 tsp. strawberry jello powder
8 c. powdered sugar (1 2-pound bag) Reserve 1 cup for rolling candy centers.
24 oz. almond bark
Stir first three ingredients together until well blended.
Add 7 cups of powdered sugar, a little at a time, until well blended.
Sprinkle a little powdered sugar over a foil-lined cookie sheet to keep the candy centers from sticking.
Use a small cookie scoop to scoop out one-inch portions. I dipped the scoop into powdered sugar between each scoop.
When all centers are scooped, roll each one in the powdered sugar on the cookie sheet, then roll in your palm till round. Place back on the same powdered sugar sprinkled, foil-lined cookie sheet.
Line another cookie sheet with fresh aluminum foil. Dip each ball into melted almond bark and place on freshly lined cookie sheet.
Sprinkle immediately with pink or red candy sprinkles or sugar, or when hardened, drizzle or swirl a little bit of pink candy coating on top of each truffle. White almond bark can be tinted with gel food coloring and used in place of pink candy melts.
