Today was a beautiful day. Sunny, breezy, about 73. After he got home from work, DH and I spent more than two hours in the yard. He pulled weeds, I drove the mower pulling the wagon. Such a beautiful evening to be outside.

We had a busy several days last week getting ready to host our church’s annual spring picnic. It was a lot of fun. The kidlets really enjoyed the chalkboard.

And the older “kids” were gracious and helpful with packing the chairs and tables after the picnic. We are blessed with great young people at our church!

Following is the menu for the week. Tried to keep it simple. I don’t like to be tied down to the kitchen this time of year, when we enjoy spending all the time we can in the garden.

I hope you enjoyed a Happy Mother’s Day. We had a good day with all our kids home except our younger son and his wife. But I was able to talk to him on the phone. Always good to hear his voice. DH brought his mother over from the nursing home and she enjoyed the backyard garden and our traditional Mother’s Day treat of strawberry shortcake. We took a four-generations picture while everyone was here. As you might guess from the picture, the fourth generation was not so excited about having a picture taken.

Now to think about the menu for the week.

Spicy Shredded Pork ~ I follow the pork recipe’s ingredient list, but I don’t blend them. I put the roast in the crock pot and throw everything in on top. I know it’s not the same as roasting it, so it’s different than the meat the original recipe would produce, but it’s still delicious! And easier.

I had this post ready to go last Sunday evening, then we had four long days of intermittent and unreliable internet access. I couldn’t get on my blog, flickr or Netflix, just to mention a few. What a long four days!! It seems to be working this evening, so I’m posting this, even though it’s late and I will try to get something from the garden posted tomorrow. Here’s a preview…

The hosta ‘Blue Cadet’ by the birdbath in the back yard is looking so nice this year. But it’s about to eat the birdbath…may have to consider moving it back a bit.

My brother-in-law came on Friday to spend Saturday riding with DH. They did 75 miles with an average speed of 18.2 mph. There’s DH in the orange jersey.

On Saturday, my Dad and my sister came for the afternoon and stayed for supper. Great-Pa was happy to be able to spend some time with the great-grands.

Great-Pa and Snow White had fun playing Angry Birds together.

And Rose Red had him cut butterflies and hearts from construction paper for her.

All fun. The week ahead is predicted to be quite warm with some days in the upper 80s, so I am not using the oven after Monday’s meal. Here’s our menu for the week.

Easter Sunday was not the best day I’ve had. I woke up feeling fine, but around 9:30 was hit with aches and nausea. It turned out to be another leg infection. I’m dosed with meds and feeling better today. But I had to ask my DDIL to come over early to fix dinner. She took care of everything with the help of my family after they returned from church. I spent most of the day sleeping in the recliner. Thankfully, I felt well enough to sit on the porch Sunday afternoon and watch the girls hunt for eggs. That cheered me up a lot. Don’t they look cute in their Easter dresses?

The menu for this week takes into account some requests. It is as follows…

The week has gone by quickly. Not sure why. I didn’t get around to making the menu earlier, but here it is in case anyone is interested. Easter dinner isn’t set in stone yet. I’ll confer with our daughter-in-law and see what their family would like to include.

The twins stayed overnight with us. Yesterday we enjoyed bubbles on the porch. Lots of laughter and lots of fun.

New dresses and they can’t wait for Sunday to wear them!

When the twins put their heads together, they always remind me of the fairy tale about Snow White and Rose Red.

Today we took straw bales out to the farm for the potato patch. The girls were fascinated. Though Snow White said, “This is itchy,” and hopped up right away.

Quick and easy menu this week. Seems there’s too much going on to stop to eat. Or at least to cook.

We are enjoying beautiful weather and the garden is full of bloom. Quince and daffodils with hints of coral made up the Sunday bouquet. Hard to choose what to use when there is so much available.

This week’s menu will be fairly easy as we have a lot going on. DH has several meetings and our son and DDIL are visting from Seattle.

Spring weather and temps are predicted for this week. We’re looking forward to that! Lettuce is sprouting in our garden and the yard is full of daffodils. The bright, cheery bouquet in my craft room smells so good!

I tried a new recipe Sunday, instead of having the spaghetti I had planned. Chicken and Dumpling Bake casserole was a big hit. Comfort food. It’s very easy to make. I added freshly ground black pepper and chopped fresh parsley. Adding pearl onions, carrots and green peas would make it taste like chicken pot pie. This casserole would work well for a pot-luck dinner or to take to a family who needs a warm meal. I wish I’d taken a picture to share with you. Next time!
